There are many ways we cook amarnath leaves. Here I present multi daal mix tadka with red amarnath. This super healthy leafy vegitable has its own kind of earthy taste.

Ingredients:-

4 to 5 types of lentils (daal) can be used.

Whole green mung daal, yelliw mung daal, masoor daal, arhar ki daal, black urad daal, safed urad daal.

1 cup mix daal.

2 cups water,

1 table spoon chopped garlic

1/2 table spoon chopped ginger,

Cumin seeds,

Hing(asofetida)

Red chillie powder,

Chopped green chiliies.(as per taste)

Turmeric powder,

Bay leaf.

Ghee

1 cup chopped red amarnath leaves.

Method

First clean amarnath leaves and chop and keep aside.

Then in a cooker dry roast multi daal mix for 2 minutes.

Then add water, salt, turmeric and bay leaf. Add little ghee, 1/2 tsp chopped garlic and cook till 4 to 5 whistles or till ot cooks. After that in a pan add ghee 1/2 tsp chopped ginger and half tsp chopped garlic,chopped green chillies and jeera.when all gets slighty brown add amarnath leaves and add little salt. Then cover the lid. Cook it for 2 to 3 minutes.

Now add cooked daal and red chillie powder and cook on low flame for 5 to 7 minutes.

For baghar : take a tadka pan. add ghee. Then add hing, cumin seeds and green chillies. When it crackles add this tadka to the prepared daal. You can garnish it with coriander leaves. And enjoy this healthy and tasty red amarnath multi daal tadka with plain rice.
