Pumpkin & red bell pepper gazpacho (chilled soup)

This tasty and healthy soup recipe is easy to prepare and make for good brunch or lunch/dinner starter. Very few ingredients and you can make a delicious soup in no time.

For two people:-


  • Pumpkin – 200gm
  • Red bell pepper -1
  • Onion -1
  • Garlic – 3 to 4 cloves
  • Salt – as per taste
  • Tomato -1 ( optional)
  • Butter or oil.
  • Black pepper.
  • Dry red chillies -2


  • Clean pumpkin and cut into small chunks with skin.
  • Bake pumpkin pieces at 180degree’s for 20 to 25 minutes.
  • On the other hand, roast red bell pepper and tomato on direct flame.
  • Roast some garlic too.
  • Then heat a pan add some oil or butter.
  • Roast dry red chillies.
  • Then add chopped onion and stir fry.
  • Cook onion till becomes translucent.
  • Switch off the flame.
  • Keep aside every ingredient to cool at room temperature.
  • Peel off red bell pepper and tomato and cut it into small pieces.
  • Now blend everything together to a smooth paste.
  • Can adjust the thickness with adding some chilled water.
  • Season it with salt and crushed black pepper.
  • You can serve it either hot or chilled.
