KIDNEY BEAN AND CARROT SOUP.

This is a protein and flavour packed soup.

Ingredients

  • 1 cup soaked kidney beans.
  • 1 carrot(cut into pieces)
  • 1tsp roasted cumin powder.
  • 1/2 inch cinnamon stick.
  • Pinch of nutmeg powder.
  • black pepper powder
  • 2 cloves.
  • 2 bay leaves.
  • 1/2 cup tomato purey.
  • 1 onion.
  • 2 to 3 cloves of garlic.
  • 1tsp coriander powder.
  • Salt as per taste.
  • 1 tbsp butter or oil.
  • Few chopped coriander leaves(for garnishing.

Preparation

  • First in a cooker take overnight soaked kidney beans ,with some salt, coriander powder, bayleaf and cinnamon stick.
  • Cook till 5 to 6 whistles or till it gets soft.
  • Keep it aside.
  • Then heat a pan .
  • Add some butter or oil.
  • When butter melts add clove and bayleaf.
  • Then add roughly chopped garlic.
  • Stir for a while then add roughly chopped onion.
  • Cook till onion gets translucent.
  • After that add carrots.
  • Put some salt and cover the lid.
  • Keep srirring in between.
  • When carrots become tender add roasted cumin powder and pinch of nutmeg powder.
  • Mix well then add tomato purey.
  • Let it boil and now add cooked kidney beans. (adjust the water if needed)
  • Let it boil.
  • You can add some cornstarch slury at this point. (but it’s optional)
  • Give a nice stir and add chopped coriander leaves.
  • Sprinkle some black pepper powder.
  • And enjoy the delicious and flavourful soup.
