Imli ki chutney. (tamarind chutney)

In my family, few things are everyone’s favourite. Dahi bada or dahi bhallas are one of them. And for dahi bhalla imli ki chutney is a must. So if I think of dahi bhalla, I have to prepare this chutney first.
Ingredients :- 100 gm imli, paanch foran(fennel seed, mustard seeds, fenugreek seeds, cumin seeds, onion seeds) ,tejpatta(bay leaf) -2,dry red chillies-4, asofetida(hing),sugar or brown sugar or(गुड़) ,dates or fig -50gm, turmeric -1 tea spoon, red chillie powder-1 table spoon, kashmiri red chillie powder -1table spoon. Black salt or rock salt 1 tea spoon, roasted jeera powder -1 tea spoon, chat masala – 1 tea spoon., salt -1 table spoon.mustard oil-2 table spoon.
Rcipe:- soak tamarind and dates or fig(whatever available) for 1 to 2 hours. Heat a pan pour mustard oil, then add paanch foran and let it crackle.Then add hing, dry red chillies, bay leaf. Add soaked tamarind and dates. Immediately add sugar, salt ,turmeric ,roasted cumin powder, red chilli powder, kashmiri red chilli powder. Let it cook on low flame till it thickens. Then switch the flame off and add chaat masala.after it cools down strain tne chutney with a fine strainer.If the consistency is of your choice then its done, otherwise cook the mixture for another 5 minutes on low flame .And your chatapati imli ki chutney is ready to rock.
