DECONSTRUCTED CHHOLE BHATURE.

Yeah you are right this is actually chhole stuff parathas. Sometimes we crave for our favourite food but stop ourselves to dig in, just because of those extra calories.so this idea came into my mind to cut some calories from my favourite chhole bhature. My kids also love to eat chhole bhature,so there wasn’t any fear of taking risk.And guess what they loved it too. Please try this deconstructed chhole bhature.

Ingredients :kabuli chane(chickpea) 1 cup(soaked overnight), 1 tea spoon chhole masala, 1/2 t spoon amchoor powder, 1 big onion or 2 medium onions (chopped), one and half tea spoon ginger garlic paste,1 table spoon tomato purey, chopped coriander leaves, 1 t spoon turmeric powder, salt, hing(asofetida),whole cumin, 1 tea spoon kashmiri mirch powder,bayleaf, 1 /2tea spoon green chilli paste(optional),whole wheat flour(maida can also be used) , 2 table spoon yoghurt(curd),oil or ghee or butter. 3 table spoon mustard oil. Garam masala powder.

Preparation :in a cooker add 3 cups of water, salt, turmeric powder, 2 bayleaf ,1 tea spoon mustard oil and cook it on medium flame for 6 to 7 whistles. So that chane can be mashed easily. Meanwhile make the dough for paratha, take flour, salt,pinch of sugar,  1 table spoon ghee or oil, yoghurt and mix well, then knead a soft dough.then brush some ghee on dough and keep aside.cover it with a muslin cloth. If your chane is ready then let it cool and mash it properly. In a small bowl soak chhole masala and kashmiri  mirch powder. Now heat a frying pan, add 1 and half tabke spoon  mustard oil .after a while add hing, cumin seeds. When starts crackle add chopped onion,fry till it turns golden brown.then add ginger garlic paste, tomato purey, soaked masala, turmeric powder, salt and a pinch of sugar. Saute till aroma releases. Then add amchoor powder and chopped  coriander. Add some garam masala powder. your stuff is ready. Now take the dough, stuff and make parathas. You can use ghee, butter or oil. But I prefer homemade ghee for parathas.And now serve it with your favourite raita or achhar or chutney and enjoy.
