Bihari sattu kachori.

Sattu ki kachori a tasty delicacy and a famously known breakfast street food from Bihar .

These delicious kachori goes well with pickle and potato curry.

Ingredients

For dough

  • 2 cups whole wheat flour. (all purpose flour can also be used).
  • 2 table spoon oil or ghee.
  • 1/3 tsp ajwain seeds.
  • 1/4 tsp mangrail ( onion seeds)
  • Pinch of asafoetida (hing)
  • Salt to taste.
  • Water as per required.
  • Oil or ghee for frying.

For stuffing

  • 150g roasted gram flour.( sattu)
  • 1 medium onion finely chopped.(optinal)
  • 1tsp garlic crushed.(optional)
  • 1tsp crushed ginger.
  • 1 tsp green chilli crushed.
  • 2 tsp chopped coriander leaves.
  • Pinch of ajwain and pinch of mangrail ( onion seeds)
  • 1 table spoon lemon juice or amchur powder.
  • Salt as per taste.
  • 1 table spoon mustard oil.

Preparation

  • In a bowl take wheat flour, ajwain, mangrail, hing, salt and oil.
  • Mix all the ingredients.
it should form this consistency.
  • Hold the mixture and check the consistency.
  • Then add required amount of water to make the dough.
  • Do not add water at once.
  • Add graduly and make a nice soft dough.

Coat the dough with some oil and keep aside.

For stuffing

  • In a bowl take sattu, chopped onion, garlic, ginger, green chillies, oil ,salt, ajwain, mangrail , lemon juice or amchur powder and mix well.
  • Add 1tsp water to make the mixture little lumpy .
  • Now take the dough and divide into small lemon size balls.
  • Take each ball and stuff with sattu mixture.
  • Stuff carefully and seal the edges completely so that stuffing does not come out.
  • Flatten the stuffed balls carefully.
  • Heat oil or ghee .
  • Deep fry at medium temperature.
  • Fry them till both the sides turn golden brown.
  • Drop kachoris to fry one by one.
  • It takes some time to fry.
  • Rest them on tissue paper to drain the excess oil.
  • Serve immidiately with the choice of your chutney, pickle and potato chana curry or plain potato curry along with adrak waali chai..
