Aquafaba & strawberry frozen dessrt .

You love to have desserts but aren’t allowed because of many health issues. Now there is a perfect solution for your sugar tooth , and that is totally healthy and guiltfree.

Aquafaba is the answer. This boil chickpea water is the great vegan substitute for egg and cream.

Just few ingredients are enough. Here I am sharing aquafaba and strawberry frozen dessert.

For 4 persons


  • 250 gm chickpeas(kabuli chana)
  • 4 table spoon – sugar/brown sugar/coconut sugar/ jaggery( as per your choice)
  • 1 tsp – white vinegar or lemon juice.
  • Pinch of salt.
  • 4 to 5 cups of water.
  • 5 to 6 strawberries.
  • 1 table spoon honey,
  • 1tsp vanilla essence.
  • 1tsp lemon juice
  • 1/2 cup water.


  • Soak chickpeas(kabuli chana) overnight or atleast 4 to 5 hours.
  • Wash soaked chickpeas .
  • In a cooker take chickpeas and add 4 to 5 cups of water because you need thick boiled chickpea water.
  • Don’t add salt.
  • Cook chickpeas for atleast 7 whistles.
  • Chickpeas should get mashed easily.
  • Then wait till it gets cool at room temperature.
  • Strain the liquid.(boiled chickpea water)
  • The strained water should be as thick as egg white.
  • If it’s not that thick, boil the liquid on low flame to get the consistency.
  • Wait till it cools down.
  • Now keep a hand blender ready.
  • Use a deep and thick bottom utensil.
  • Add white vinegar or lime juice and pinch of salt to the boiled water.
  • Then add 4 table spoon caster sugar or briwn sugar or powdered jaggery or coconut sugar as per your choice.
  • Then start beating.
  • First beat on normal mode for 2 minutes.
  • Then stop for a while.
  • Again beat till you get soft peaks as whipped cream.( it can take 3 to 4 minutes)
  • Be patient while beating the liquid.
  • The consistency of the liquid should be of egg white otherwise you won’t get perfect result.
  • On the other hand keep your strawberry compote ready.
  • For that, chopp strawberry into small pieces.
  • In a pan add half cup water and chopped strawberries.
  • Add honey, vanilla essence and lime juice and let boil on low flame.
  • Cook till you get thick strawberry compote .
  • Let it cool at room temperature.
  • Then store in an airtight container in the refrigerator.
  • When your aquafaba is ready add this strawberry compote and m8x carefully.
  • Mix using cut and fold method.
  • Be soft while mixing both.
  • Then take an airtight container.
  • Pour this aquafaba and strawberry compote mixture into it.
  • Then freeze this dessert for atleast 4 hours.
  • And then enjoy this yummy, guiltfree dessert with your loved ones.

You can add many other ingredients to make different types of frozen dessert, like coffee or chocolate or any other fruit of your choice.
